Don’t overthink it! Ostrich meat can be substituted for any beef recipe. Just grill those steaks on the pan or BBQ with any of your favourite sides. Or use that smoker! Here are a few hints and tricks to get you started!

ROASTED OSTRICH BONE MARROW

Thaw 4-6 ostrich marrow bones and trim any excess meat. Pat bones dry.

Preheat the oven to 450 F.

Stand the bones in a roasting pan. Sprinkle the bones with kosher salt and garlic. 

Roast for 20-25 minutes. The marrow should start melting and bubbling but should not be sliding out of bones.

Scoop out onto toasted French bread. 

Serve with a side salad.

Hint: Save your bones for soup!

 

OSTRICH BROTH: 

Preheat oven to 400F

Place bones on a roasting pan and bake for 45min. This creates the best flavour. Collagen bones (knee and knuckle bones) will create a thicker soup. Marrow bone is packed with nutrients. Or use that neck bone as well. Or why not mix them and get all the great benefits? 

Place the roasted bones in a large pot. Add water. Add any seasonings. 

Bring to a boil and then reduce to a simmer. 

Use a slotted spoon to collect any foam that settles on top and discard. You might need to do this a couple times as it is boiling.

The longer your bones simmer the better. 8-24 hours is great. 

If you can get that crockpot going for 24-48hours your future self will thank you! The flavour will be amazing!

When you are ready, take the bones out and pour the broth through a fine strainer. 

It is now ready to consume, or refrigerate/freeze and reheat later.  

A good broth is key for a great soup!


 
OSTRICH STEAK PERFECT EVERY TIME

Defrost your ostrich steak 

Preheat oven to 450

Season your ostrich steak with salt

Heat pan with butter

Sear 2-3 minutes on each side

Bake in oven at 450 for 10min. 

Remove from oven, let sit for 5 minutes.
